Explore Our Coffee Legacy: Finca San Jose and the Craft of Specialty Coffee

Finca San Jose: Where Tradition Meets Innovation

At Escondido Specialty Coffee, Finca San Jose has been a pillar of our coffee production. This expansive farm, covering over 420 hectares, +1000 acres (that's 557 soccer fields!), has a long history of growing exceptional coffee beans. Nestled in the Ilamatepec mountain range of El Salvador, situated in the city of Ahuachapán in Concepción de Ataco, Finca San Jose benefits from fertile soil, the right altitude, and the dedication of our skilled farmers to produce some of the finest coffee varietals in the region.

For years, Finca San Jose has been home to Bourbon, Marsellesa, and San Pacho coffee beans—each of which carries its own unique flavor profiles that make our coffee offerings so special. These varietals have thrived on our land, and their consistent quality has made Finca San Jose a trusted name among coffee connoisseurs.

The Introduction of Geisha Coffee: A New Chapter

While Finca San Jose is known for its traditional coffee varieties, we’re also looking ahead to new opportunities. This year, we planted our first batch of Geisha coffee plants—a rare and prized variety that’s celebrated for its delicate flavors and floral aromas. The addition of Geisha to our farm doesn’t just add another coffee to our offerings; it represents our commitment to pushing the boundaries of coffee excellence while staying true to our roots.

We’ve planted approximately 4,000 new Geisha plants, which will begin to bear fruit in 2028. Though it’s a long wait, we know that the result will be worth it. Geisha is known for producing some of the highest-quality coffee in the world, and we’re excited to add this renowned variety to our already stellar lineup.

The Perfect Growing Conditions

The success of our coffee is not just about the varietals—it’s also about the environment. Finca San Jose is perfectly situated at high altitudes, with rich, volcanic soil that provides the nutrients our coffee plants need to thrive. These conditions, combined with careful management by our team—including our lead agronomist, Mario Diaz, and our finca caretaker, Don Luis—ensure that every bean we grow meets the highest standards of quality.

A Commitment to Craftsmanship and Scale

What sets Finca San Jose apart from other specialty coffee producers is the unique combination of craftsmanship and scale. While many specialty coffees come from small, family-run farms, Finca San Jose stands out as a larger operation that doesn’t compromise on quality. We have the experience, the land, and the skilled team to produce high-grade specialty coffee in larger volumes, ensuring that more coffee lovers can experience the rich flavors of El Salvador.

Coffee Varietals: Bourbon, Marsellesa, San Pacho, and Now Geisha

Bourbon: Known for its balance of sweetness and acidity, Bourbon offers notes of chocolate and fruit, making it a favorite among coffee aficionados.
Marsellesa: With its resistance to disease and ability to thrive at high altitudes, Marsellesa delivers a complex cup with hints of citrus and a creamy body.
San Pacho: This variety is known for its robust flavor profile, featuring notes of caramel and nuts, with a smooth finish.
Geisha (New Addition): Famous for its distinct floral aroma and tea-like qualities, Geisha is one of the most sought-after coffee varieties in the world. Our new Geisha plants will take a few years to mature, but we’re excited about the future of this exceptional coffee at Finca San Jose.

A Look Ahead

As we continue to cultivate these incredible coffee varieties, we’re excited for what the future holds. Finca San Jose is more than just a farm—it’s the heart of our coffee production, where tradition meets innovation. Whether it's the tried-and-true Bourbon, Marsellesa, and San Pacho, or the exciting addition of Geisha, we remain dedicated to producing the highest-quality coffee possible.

Stay tuned for more updates from Finca San Jose, and keep an eye out for our first Geisha harvest in 2028!
